At the moment, no. In the current version of Inspect, there is not the ability for users to customize the Severity options and colors.

However, Inspect users can create a new field with a single choice type and add their own Severity options. They will not have the color but they can still see this severity rating on the dashboard using a dropdown menu to select different fields based on their requirement.
